Ingredients

  • 3 cups flour
  • 2 teaspoons ginger
  • 2 teaspoons baking soda
  • 3 cups sugar
  • 4 large eggs
  • 1/2 cup orange juice
  • 3 teaspoons cinnamon
  • 3/4 teaspoon cloves
  • 1 1/2 teaspoons salt
  • 1 (15 oz.) can pure pumpkin
  • 1 cup vegetable oil
  • 1 1/2 cups fresh or frozen cranberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9 x 5-inch loaf pans.
  2. Combine flour, ginger, cinnamon, cloves, baking soda, and salt in a large bowl.
  3. In a larger mixer bowl, combine sugar, pumpkin, eggs, vegetable oil, and orange juice.
  4. Beat until just blended.
  5. Add pumpkin mixture to the flour mixture and stir just until moistened.
  6. Fold in cranberries.
  7. Divide batter evenly between the prepared loaf pans.
  8. Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
  9. Cool in pans for 10 minutes, then remove and cool completely on a wire rack.
