Ingredients

  • 1 egg
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1 1/2 cups pumpkin pie filling
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 teaspoons pie spice
  • 1/2 teaspoon ginger
  • 1 tablespoon melted margarine
  • confectioners sugar or maple syrup

Instructions

  1. Beat the egg, sugar, and salt until fluffy.
  2. Blend in the pumpkin pie filling.
  3. Sift together the flour, baking powder, baking soda, pie spice, and ginger.
  4. Fold the dry ingredients into the egg mixture.
  5. Add melted margarine and mix well.
  6. Drop heaping tablespoonfuls of batter into a greased frying pan.
