Ingredients

  • 2 cups raisins
  • 1 1/2 cups water
  • 5 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/4 cups margarine or Crisco
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 2 cups sugar
  • 3 eggs
  • 1 cup chopped nuts
  • Orange Icing (if desired)

Instructions

  1. Combine raisins and water in a saucepan.
  2. Bring to boiling and simmer for 5 minutes.
  3. Drain, reserving 1/2 cup of liquid, and allow to cool.
  4. Sift together the flour, baking powder, baking soda, and salt.
  5. Cream the margarine or Crisco, sugar, eggs, and vanilla at high speed for 3 minutes.
  6. Alternately add the dry ingredients in fourths with the reserved raisin liquid, mixing well after each addition.
  7. Stir in the cooled raisins and chopped nuts.
  8. Drop heaping tablespoonfuls of the batter onto a lightly greased baking sheet, spacing them about 2 inches apart.
  9. Bake at 400°F (200°C) for about 10 minutes or until golden brown.
