Pumpkin Maple Waffles

Ingredients

  • 1 14 cups quinoa flour
  • 2 tablespoons ground flax seeds
  • 2 teaspoons pumpkin pie spice
  • 1 12 teaspoons baking powder
  • 14 teaspoon baking soda
  • 14 teaspoon sea salt
  • 1 large egg
  • 1 cup buttermilk
  • 1 cup pumpkin puree
  • 2 tablespoons butter, melted
  • 2 tablespoons maple syrup

Instructions

  1. In large bowl, combine dry ingredients.
  2. In medium bowl, whisk together egg, buttermilk, pumpkin, butter and maple syrup.
  3. Add the egg mixture to the flour mixture and stir until just blended.
  4. Spray waffle maker with cooking spray.
  5. For each waffle, pour about 1/3 cup batter into waffle maker.
