Ingredients

  • 3 1/2 cups flour
  • 1 1/2 cups sugar
  • 2 tablespoons pumpkin pie spice
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1/2 cup brown sugar
  • 4 eggs
  • 2 cups pumpkin
  • 1 cup salad oil
  • 2/3 cup water
  • 1 box dry mincemeat, crumbled
  • chopped walnuts (optional)

Instructions

  1. Mix the first six dry ingredients in a bowl.
  2. Add the remaining ingredients and mix well.
  3. Oil three loaf pans or use mini muffin pans.
  4. Bake at 350°F (175°C) for 45 minutes.
