Ingredients

  • 2 c. pancake mix
  • 2 Tbsp. brown sugar
  • 2 tsp. cinnamon
  • 1 1/2 c. evaporated milk
  • 1/2 can pumpkin
  • 2 Tbsp. vegetable oil
  • 2 eggs
  • 1 tsp. vanilla
  • 1 tsp. allspice

Instructions

  1. In a large mixing bowl, combine pancake mix, brown sugar, cinnamon, and allspice.
  2. Add evaporated milk, pumpkin, vegetable oil, eggs, and vanilla to the dry ingredients.
  3. Mix until just combined and smooth.
  4. Heat a lightly greased skillet or griddle over medium heat.
  5. Pour 1/4 cup of batter for each pancake onto the skillet.
  6. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
  7. Flip and cook for another 2-3 minutes until golden brown and cooked through.
