Ingredients

  • 1 3/4 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup sugar
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 3/4 cup pumpkin puree
  • 1/3 cup skim milk
  • 1/3 cup oil
  • 1/2 cup egg substitute
  • 1/2 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix flour, baking powder, baking soda, salt, sugar, cinnamon, and nutmeg.
  3. Make a well in the center of the dry ingredients.
  4. In a medium bowl, combine pumpkin puree, skim milk, oil, egg substitute, and chopped pecans; mix well.
  5. Pour the wet mixture into the well in the dry ingredients and stir until just moistened.
  6. Spoon the batter into a 4 x 8-inch loaf pan sprayed with nonstick oil.
  7. Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool, then remove from the pan.
  9. Optional: sprinkle with confectioners sugar or serve with cream cheese.
