Ingredients

  • 3 1/2 cups flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 3 cups sugar
  • 2 teaspoons cinnamon
  • 2 teaspoons nutmeg
  • 1 teaspoon allspice
  • 2 cups cooked pumpkin
  • 4 eggs
  • 1 cup oil
  • 2/3 cup water
  • 1/2 cup chopped pecans
  • 1 cup dates or raisins

Instructions

  1. Combine flour, baking soda, salt, sugar, cinnamon, nutmeg, and allspice in a large mixing bowl.
  2. Make a deep well in the center of the mixture.
  3. Add cooked pumpkin, beaten eggs, oil, water, chopped pecans, and dates or raisins into the well.
  4. Mix just enough to moisten all ingredients.
  5. Pour the batter into a greased or parchment-lined loaf pan.
  6. Bake at 350°F (175°C) for approximately 60 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool before removing from the pan and slicing.
