Ingredients

  • 1 3/4 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1 stick melted butter
  • 2 eggs
  • 3/4 cup sugar
  • 2 (8 oz.) cream cheese
  • 3 egg yolks
  • 1 (16 oz.) can pumpkin
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • Cool Whip

Instructions

  1. Mix graham cracker crumbs, sugar, and melted butter and press into a 9 x 12 inch pan to form the crust.
  2. Blend the eggs, cream cheese, and sugar; spread this mixture over the crust.
  3. Bake at 350°F for 20 minutes.
  4. In a separate bowl, beat the egg yolks and add pumpkin, sugar, milk, salt, and cinnamon; cook for 5 minutes until thick.
  5. Soften gelatin in water, then add water to the pumpkin mixture and let cool.
  6. Beat egg whites until stiff peaks form.
  7. Add 1/4 cup sugar to the egg whites and fold into the cooled pumpkin mixture.
  8. Pour the pumpkin mixture over the cream cheese layer.
  9. Refrigerate until the pie is firm, then top with Cool Whip and serve.
