Ingredients

  • 1/2 cup raisins
  • 1 1/2 cups self-rising flour
  • 1 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup vegetable oil
  • 1/2 cup canned solid pack pumpkin
  • 2 large eggs
  • 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 350°F.
  2. Grease twelve 1/2-cup muffin cups. Place raisins in a small bowl.
  3. Pour boiling water over the raisins to cover and let stand for 5 minutes.
  4. Drain the raisins.
  5. In a large bowl, mix self-rising flour, sugar, ground cinnamon, and ground nutmeg.
  6. Add vegetable oil, canned pumpkin, and eggs to the dry ingredients and mix just until combined.
  7. Stir in the drained raisins and chopped pecans.
  8. Divide the batter evenly among the prepared muffin cups.
  9. Bake until a tester inserted in the center comes out clean, about 25 minutes.
  10. Cool slightly on a rack. Serve warm or at room temperature.
