Pumpkin Tomato Chutney

Ingredients

  • 2 1/2 lb. fresh pumpkin
  • 1 lb. ripe tomatoes
  • 1/2 lb. onions
  • 2 oz. raisins
  • 3/4 lb. brown sugar
  • 3/4 lb. white sugar
  • 2 Tbsp. salt
  • 2 tsp. ginger
  • 1 tsp. peppercorns
  • 2 tsp. allspice berries
  • 2 cloves garlic
  • 1 1/4 pt. vinegar

Instructions

  1. Peel the pumpkin, discard seeds, and scrape out the center.
  2. Slice the pumpkin into 2 x 1 x 1/2-inch pieces.
  3. Peel and slice the tomatoes.
  4. Peel and slice the onions and press the garlic.
  5. Crush the peppercorns and allspice berries in a mortar.
  6. Put all ingredients in a large pan.
  7. Bring gently to a boil.
  8. Cook very slowly and stir often.
  9. When the mixture is jammy, transfer into jars.
