Vegetable Pulao
A flavorful and aromatic vegetable pulao featuring mixed vegetables, fragrant spices, and basmati rice, perfect for a hearty, wholesome meal suitable for family gatherings.
Ingredients
- 2 cups basmati rice ⓘ
- 3 onions, finely chopped ⓘ
- 1 small cauliflower, chopped
- 1 cup green peas ⓘ
- 1 cup cabbage, chopped ⓘ
- 1 bell pepper, chopped ⓘ
- 2 French beans, chopped ⓘ
- 2 tomatoes, chopped ⓘ
- 4 cloves garlic ⓘ
- Small piece of ginger ⓘ
- 4 green chilis ⓘ
- Few cilantro leaves, chopped ⓘ
- 2 cardamom ⓘ
- 2 cloves
- 3 Tbsp oil ⓘ
- 1/2 tsp turmeric ⓘ
- Salt to taste ⓘ
Instructions
- Grind together 3 cloves of garlic, 4 green chilies, and a small piece of ginger.
- Heat oil in a pan and season with cardamom and cloves.
- Add chopped onions and fry until light brown.
- Add the ground spice mixture and fry until oil separates.
- Add chopped vegetables along with turmeric and coriander powder.
- Fry for 2 minutes.
- Add enough water to boil vegetables for 5 minutes.
- Half boil the basmati rice.
- Remove the starch from the rice and add it to the vegetables, mixing well.
- Add a few leaves of mint, cover, and keep on low flame for 3 minutes. Serve hot with raita.
