Vegetable Pulao

Ingredients

  • 2 cups basmati rice
  • 3 onions, finely chopped
  • 1 small cauliflower, chopped
  • 1 cup green peas
  • 1 cup cabbage, chopped
  • 1 bell pepper, chopped
  • 2 French beans, chopped
  • 2 tomatoes, chopped
  • 4 cloves garlic
  • Small piece of ginger
  • 4 green chilis
  • Few cilantro leaves, chopped
  • 2 cardamom
  • 2 cloves
  • 3 Tbsp oil
  • 1/2 tsp turmeric
  • Salt to taste

Instructions

  1. Grind together 3 cloves of garlic, 4 green chilies, and a small piece of ginger.
  2. Heat oil in a pan and season with cardamom and cloves.
  3. Add chopped onions and fry until light brown.
  4. Add the ground spice mixture and fry until oil separates.
  5. Add chopped vegetables along with turmeric and coriander powder.
  6. Fry for 2 minutes.
  7. Add enough water to boil vegetables for 5 minutes.
  8. Half boil the basmati rice.
  9. Remove the starch from the rice and add it to the vegetables, mixing well.
  10. Add a few leaves of mint, cover, and keep on low flame for 3 minutes. Serve hot with raita.
