Ingredients

  • 3 egg whites
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 11 single graham crackers
  • 1/2 teaspoon baking powder
  • 1 cup ground pecans
  • whipped cream

Instructions

  1. In a bowl, beat egg whites until stiff.
  2. Gradually add sugar while beating.
  3. Add vanilla extract and mix well.
  4. In another bowl, crush graham crackers.
  5. Add baking powder and ground pecans to the crushed graham crackers and mix.
  6. Gently fold the dry ingredients into the stiff egg whites.
  7. Pour the mixture into a greased 9-inch pie pan.
  8. Bake in a preheated oven at 350°F (175°C) for 30 minutes.
  9. Allow the pie to cool, then cover with whipped cream.
  10. Refrigerate for 1 hour before serving.
