Ingredients

  • 6 quail
  • 1 large onion, chopped
  • 1 carton fresh mushrooms, sliced
  • flour
  • vegetable oil
  • 2 cans creamy chicken mushroom soup
  • 1 package egg noodles
  • garlic salt
  • cracked pepper
  • Cajun seasoning

Instructions

  1. Remove breasts from the bones and remove legs, then cut into two pieces each.
  2. Dust the breasts and leg pieces in seasoned flour.
  3. Brown the breasts and leg pieces over medium-high heat in a Dutch oven or large skillet, adding oil as necessary to prevent burning.
  4. Remove the browned pieces from the skillet and set aside.
  5. Brown the chopped onion and sliced mushrooms in the same skillet.
  6. Add the creamy chicken mushroom soup and one can of water to the skillet, dissolving the soup, and simmer for 10 minutes.
  7. Return the quail pieces to the skillet and simmer uncovered until the quail is tender, approximately 1 1/2 to 2 hours.
  8. Season with garlic salt, cracked pepper, and Cajun seasoning as needed.
  9. Serve the quail and sauce over cooked egg noodles.
