Queen's Lace Cookies are delicate, lacy treats with a rich flavor of brandy and lemon zest, perfect for elegant gatherings or when you crave a sweet, sophisticated snack.

Ingredients

  • 1/4 cup squeeze Parkay margarine
  • 1/4 cup sugar
  • 2 tablespoons dark corn syrup
  • 1 teaspoon brandy
  • 1/2 cup flour
  • 1/2 teaspoon grated lemon rind
  • 1/4 teaspoon ginger
  • 1 cup heavy cream
  • 1 tablespoon brandy

Instructions

  1. Heat margarine, sugar, and corn syrup over low heat in a heavy saucepan, stirring until sugar is dissolved.
  2. Remove from heat; beat in 1 teaspoon of brandy, flour, lemon rind, and ginger until well combined.
  3. Drop level teaspoons of batter onto a greased cookie sheet, spacing them 3 inches apart.
  4. Bake at 350°F for 8 to 10 minutes or until golden brown.
  5. Remove from oven and wait 10 to 15 seconds for cookies to set.
  6. Remove cookies one at a time; turn smooth side up and wrap around the handle of a greased wooden spoon.
  7. Slip the cookie off the handle; repeat with remaining batter, working quickly.
  8. When ready to serve, fill cookies with Brandied Whipped Cream.
