A cheesy, flavorful quesadilla casserole with melted cheddar and Monterey Jack, topped with fresh vegetables, perfect for family dinners or casual gatherings.

Ingredients

  • 1 lb. Cheddar cheese
  • 1 lb. Monterey Jack cheese
  • 12 flour tortillas
  • 1 medium onion, chopped fine
  • 1 (28 oz.) can tomatoes
  • 1 (4 oz.) can green chilies, seeded and chopped
  • 1 Tbsp. jalapeno sauce
  • 1 green bell pepper, sliced in rings

Instructions

  1. Preheat oven to 425°F.
  2. Oil a 9 x 13-inch casserole dish.
  3. Slice cheese about 1/4-inch thick, 4 inches long, and 2 inches wide.
  4. Prepare the quesadillas by stacking one slice of each kind of cheese near the edge of a tortilla.
  5. Top with a rounded teaspoon each of chopped onion and chopped green chilies.
  6. Roll tortillas up around the cheese and fold the ends under to form 12 small packages.
  7. Place the rolled tortillas in the prepared casserole dish.
  8. Bake in the preheated oven for approximately 30 minutes, or until cheese is melted and bubbly.
