Ingredients

  • 1/2 cup shortening
  • 3/4 cup sugar
  • 1 egg
  • 2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 2 cups blueberries
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1/2 cup sugar

Instructions

  1. Thoroughly cream shortening and 3/4 cup sugar; add egg and beat until light and fluffy.
  2. Mix together 2 cups flour, baking powder, and salt; add to creamed mixture alternately with milk.
  3. Spread the batter in a greased 11 x 7 x 1 1/2-inch pan.
  4. Top the batter with blueberries.
  5. In a small bowl, mix 1/2 cup sugar, 1/2 cup flour, and cinnamon; cut in butter until crumbly.
  6. Sprinkle the streusel mixture over the blueberries.
  7. Bake at 350°F (175°C) for 45 minutes.
  8. Cut into squares and serve warm.
