Quick Cabbage Saute

A quick, flavorful sauté of cabbage with toasted pine nuts, colorful vegetables, and savory soy-sherry sauce, perfect for a light, healthy meal or side dish.

Ingredients

  • 2 Tbsp. pine nuts
  • 3 Tbsp. peanut oil or safflower oil
  • 1 leek (white only), finely chopped
  • 2 carrots, peeled and julienned
  • 1/2 sweet pepper, seeded and julienned
  • 1 medium cabbage, cored and finely shredded
  • 1 tsp. chili paste with garlic
  • 2 Tbsp. soy sauce
  • 1/4 c. dry sherry (optional)

Instructions

  1. In large skillet, toast pine nuts over medium heat for 3 to 5 minutes, shaking pan constantly to avoid burning. Remove and set aside.
  2. In the same skillet, heat peanut oil or safflower oil over medium heat.
  3. Saute finely chopped leek until slightly softened, about 2 minutes.
  4. Add julienned carrots and red peppers; saute about 3 minutes.
  5. Add shredded cabbage; saute until just wilted, approximately 3 minutes.
  6. Add chili paste with garlic, soy sauce, sherry, salt, and pepper to taste. Stir to combine.
  7. Bring to a boil for 1 minute.
  8. Add toasted pine nuts and serve immediately.
