Quick Cabbage Saute
A quick, flavorful sauté of cabbage with toasted pine nuts, colorful vegetables, and savory soy-sherry sauce, perfect for a light, healthy meal or side dish.

- In large skillet, toast pine nuts over medium heat for 3 to 5 minutes, shaking pan constantly to avoid burning. Remove and set aside.
- In the same skillet, heat peanut oil or safflower oil over medium heat.
- Saute finely chopped leek until slightly softened, about 2 minutes.
- Add julienned carrots and red peppers; saute about 3 minutes.
- Add shredded cabbage; saute until just wilted, approximately 3 minutes.
- Add chili paste with garlic, soy sauce, sherry, salt, and pepper to taste. Stir to combine.
- Bring to a boil for 1 minute.
- Add toasted pine nuts and serve immediately.
