Ingredients

  • 2 c. all-purpose flour
  • 4 oz. shredded sharp Cheddar cheese
  • 1 tsp. sugar
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. coarsely ground pepper
  • 1 c. buttermilk
  • 1/3 c. margarine, melted
  • 2 eggs

Instructions

  1. Preheat oven to 350°F.
  2. Grease the bottom only of a 9 x 5-inch loaf pan.
  3. Lightly spoon flour into a measuring cup and level off.
  4. In a medium bowl, combine flour, cheese, sugar, baking powder, baking soda, salt, and pepper; mix well.
  5. In a small bowl, combine buttermilk, margarine, and eggs; blend well.
  6. Add the wet ingredients to the dry ingredients, stirring just until moistened.
  7. Pour the batter into the greased loaf pan.
  8. Bake at 350°F for 35 to 45 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 15 minutes, then remove.
  10. Cool completely on a wire rack, then wrap and store in the refrigerator.
