Ingredients

  • 1 cup chopped onions
  • 2 cloves garlic
  • 2 Tbsp vegetable oil
  • 1 1/2 lb fish fillets
  • 2 (10 3/4 oz) cans condensed chicken broth
  • 2 cans water
  • 3 medium tomatoes
  • 2 medium green peppers
  • 1/2 tsp salt
  • 1/2 tsp oregano
  • 1/2 tsp cayenne pepper

Instructions

  1. Cook chopped onions and crushed garlic in vegetable oil in a large, heavy pan until tender.
  2. Add the fish fillets, condensed chicken broth, water, diced tomatoes, diced green peppers, salt, oregano, and cayenne pepper to the pan.
  3. Heat the mixture until it reaches a boil.
  4. Reduce the heat to low, cover, and simmer until the fish flakes easily with a fork, about 5 minutes.
