Quick Oatmeal Bread
A quick, moist oatmeal loaf with a subtle molasses sweetness, perfect for breakfast or a comforting snack that’s ready in a few hours.

- Dissolve yeast in 1/2 cup warm water (110°F).
- Combine 1 1/2 cups boiling water, oats, shortening, molasses, and salt in a bowl and let cool to lukewarm. (It will be softer than kneaded dough.)
- Add the softened yeast to the liquid mixture and mix well.
- Blend in 2 beaten eggs.
- Gradually add 5 1/2 cups sifted flour, mixing until the dough is thoroughly incorporated.
- Place the dough in a greased bowl, turn once to grease the surface, and cover. Store in the refrigerator for at least 2 hours.
- Shape the dough into two loaves on a well‑floured surface and place each loaf in a greased 9 x 5 1/4 x 2 3/4‑inch loaf pan; cover. Let rise in a warm place (80°F to 85°F) until doubled, about 2 hours.
- Preheat the oven to 375°F and bake the loaves for 1 hour.
