Ingredients

  • 2 pkg. yeast
  • 1/2 c. water
  • 1 1/2 c. boiling water
  • 1 c. quick cooking oats
  • 1/3 c. shortening
  • 1/2 c. light molasses
  • 3 tsp. salt
  • 2 beaten eggs
  • 5 1/2 c. sifted flour

Instructions

  1. Dissolve yeast in 1/2 cup warm water (110°F).
  2. Combine 1 1/2 cups boiling water, oats, shortening, molasses, and salt in a bowl and let cool to lukewarm. (It will be softer than kneaded dough.)
  3. Add the softened yeast to the liquid mixture and mix well.
  4. Blend in 2 beaten eggs.
  5. Gradually add 5 1/2 cups sifted flour, mixing until the dough is thoroughly incorporated.
  6. Place the dough in a greased bowl, turn once to grease the surface, and cover. Store in the refrigerator for at least 2 hours.
  7. Shape the dough into two loaves on a well‑floured surface and place each loaf in a greased 9 x 5 1/4 x 2 3/4‑inch loaf pan; cover. Let rise in a warm place (80°F to 85°F) until doubled, about 2 hours.
  8. Preheat the oven to 375°F and bake the loaves for 1 hour.
