Ingredients

  • 1 cup mushrooms, sliced
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 2 Tbsp butter
  • 1 (10 oz) package chopped spinach, thawed and drained
  • 1 (12 oz) soft cream cheese
  • 1 medium chopped tomato
  • 1/4 cup milk or wine
  • 1/4 cup Parmesan cheese
  • 1 tsp Italian seasoning
  • salt and pepper

Instructions

  1. Cook the pasta in boiling salted water until al dente, then drain.
  2. Saute the mushrooms, chopped onion, minced garlic, and butter in a large skillet until tender.
  3. Add the thawed and drained chopped spinach, cream cheese, chopped tomato, milk or wine, Parmesan cheese, Italian seasoning, salt, and pepper to the skillet. Cook until it begins to boil and the cheese melts.
  4. Add the cooked pasta to the sauce and stir to combine.
  5. Heat through and serve hot.
