Quick Shrimp Skillet

Ingredients

  • 1 Tbsp. reduce calorie margarine
  • 1/2 c. sliced green onion
  • 2 c diagonally sliced celery
  • 1/2 c. sliced carrots
  • 1 c. sliced mushrooms (fresh)
  • 2 cloves garlic, minced
  • 1/2 tsp. ground ginger
  • 1/8 tsp. pepper
  • 2 tsp. low sodium soy sauce
  • 3/4 lb. shelled and deveined shrimp (medium)
  • 2 Tbsp. water
  • 1 1/2 c. hot cooked rice, cooked without salt or fat

Instructions

  1. Add margarine to heavy skillet or wok; heat to medium high (325°) for 1 minute.
  2. Add onions, celery, carrots, garlic and mushrooms.
  3. Stir-fry until vegetables are crisp-tender.
  4. Add ginger, pepper, soy sauce, shrimp and water; stir-fry until shrimp are pink.
  5. Serve over rice.
