Quick Shrimp Skillet
Ingredients
- 1 Tbsp. reduce calorie margarine ⓘ
- 1/2 c. sliced green onion ⓘ
- 2 c diagonally sliced celery ⓘ
- 1/2 c. sliced carrots ⓘ
- 1 c. sliced mushrooms (fresh) ⓘ
- 2 cloves garlic, minced ⓘ
- 1/2 tsp. ground ginger ⓘ
- 1/8 tsp. pepper ⓘ
- 2 tsp. low sodium soy sauce ⓘ
- 3/4 lb. shelled and deveined shrimp (medium) ⓘ
- 2 Tbsp. water ⓘ
- 1 1/2 c. hot cooked rice, cooked without salt or fat ⓘ
Instructions
- Add margarine to heavy skillet or wok; heat to medium high (325°) for 1 minute.
- Add onions, celery, carrots, garlic and mushrooms.
- Stir-fry until vegetables are crisp-tender.
- Add ginger, pepper, soy sauce, shrimp and water; stir-fry until shrimp are pink.
- Serve over rice.
