Ingredients

  • 3 wild rabbits
  • 2/3 cup oil
  • 4 medium onions
  • 1/2 head garlic
  • 1 tablespoon hot green pepper
  • 1/2 cup red wine
  • 1 stalk celery and leaves
  • 1 1/2 cups green onions
  • 2 bay leaves
  • 1/4 teaspoon savory
  • 2 cloves
  • salt
  • pepper
  • 1 teaspoon parsley

Instructions

  1. Wash and drain the rabbit meat.
  2. In a large black iron pot, heat the oil.
  3. Add the rabbit and fry until dark brown.
  4. Add the chopped onions, garlic, green pepper, celery, and green onions, browning while stirring.
  5. Add the red wine, bay leaves, savory, cloves, salt, pepper, and parsley, stirring well.
  6. Place cornstarch in a cup.
  7. Add cold water slowly to the cornstarch, stirring to make a thick paste.
  8. Stir the cornstarch paste into the pot.
  9. Add additional water to achieve desired sauce consistency.
  10. Serve the rabbit and sauce over hot rice.
