Ingredients

  • 4 tbsp butter
  • 3 lb rabbit, cut into bite-sized pieces
  • 2 onions, chopped
  • 2 tbsp flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp sugar
  • 1/2 tsp rosemary
  • 1 cup water
  • 2 cups red wine
  • juice and grated rind of 1 lemon

Instructions

  1. Assemble and prepare all ingredients. In a 6-quart pot, melt butter and brown rabbit pieces.
  2. Add chopped onions and cook until translucent.
  3. Sprinkle flour over rabbit, stirring to coat.
  4. Add all seasonings: salt, pepper, sugar, rosemary; mix well.
  5. Combine water, red wine, lemon juice, and lemon rind.
  6. Pour the liquid mixture over the rabbit.
  7. Bring to a boil, reduce heat, and simmer covered for 1 hour.
