Rainbow Coleslaw
Ingredients
- 1 1/2 tbsp maple syrup ⓘ
- 3 tbsp rice vinegar ⓘ
- 1/2 tsp ground toasted cumin ⓘ
- 3 cups finely shredded red and/or green cabbage ⓘ
- 2 cups finely shredded kale
- 2 cups sliced red, orange, yellow and/or green pepper ⓘ
- 1/2 cup julienned zucchini ⓘ
- 1/4 cup shredded carrot ⓘ
- 1/4 cup sliced red onion ⓘ
- 1/4 cup chopped fresh cilantro ⓘ
- 1/2 cup chopped salted peanuts ⓘ
Instructions
- Combine maple syrup, vinegar and cumin. Season. Add cabbage, kale, peppers, zucchini, carrot, red onion and cilantro. Toss to coat. Cover and chill for 1 hour or overnight.
- Toss with peanuts before serving.
