Ingredients

  • 2 (10 oz.) pkg. cooked baby shrimp
  • 3 c. cooked rice
  • 1/4 c. chopped celery
  • 1/4 c. chopped pimento-stuffed olives
  • 1/4 c. chopped green pepper
  • 1/4 c. chopped onion
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 3 Tbsp. mayonnaise
  • crisp head lettuce
  • 2 tomatoes
  • 1/2 c. French dressing
  • 1 lemon

Instructions

  1. Combine shrimp, rice, celery, pimento-stuffed olives, green pepper, and onion in a large bowl.
  2. Cover and chill the mixture.
  3. In a separate small bowl, stir together salt, pepper, and mayonnaise.
  4. Toss the mayonnaise mixture with the shrimp and rice mixture until well coated.
  5. Spoon the shrimp salad onto crisp lettuce leaves.
  6. Garnish with tomato wedges.
  7. Serve with French dressing and lemon wedges.
