Ingredients

  • 3 cups flour
  • 3/8 cup brown sugar
  • 3/4 cup raisins
  • 3/4 teaspoon ginger
  • 1 teaspoon nutmeg
  • 1.5 teaspoons cinnamon
  • 1.5 tablespoons baking powder
  • 3/8 cup egg substitute
  • 1.5 cups nonfat milk
  • 1.5 teaspoons vanilla

Instructions

  1. In a large bowl, combine all dry ingredients, including raisins.
  2. Mix together egg substitute, nonfat milk, and vanilla.
  3. Add the liquid mixture to the dry mixture and mix well.
  4. Pour the batter into a greased 9 x 5-inch loaf pan.
  5. Let stand for 5 minutes.
  6. Bake at 375°F for 45 minutes or until done.
