Ingredients

  • 6 to 6 1/2 cups flour
  • 3/4 cup sugar
  • 1 teaspoon salt
  • 2 envelopes active dry yeast
  • 1 cup milk
  • 1/4 cup water
  • 1/4 cup butter or margarine
  • 2 teaspoons grated orange peel
  • 1 teaspoon nutmeg
  • 4 eggs

Instructions

  1. In a large bowl, combine 2 cups of the flour, the sugar, salt, and yeast.
  2. In a small saucepan over low heat, combine milk, water, butter or margarine, grated orange peel, and nutmeg.
  3. Heat to very hot (120° to 130°F). Butter need not melt completely.
  4. Stir the milk mixture into the yeast mixture and beat with an electric mixer at medium speed for 2 minutes, scraping the bowl as needed.
  5. Add 3 eggs and 1 more cup of flour. Beat at high speed for 3 minutes.
  6. Stir in raisins and enough of the remaining flour to make a soft dough.
  7. Turn onto a floured board and knead for 8 to 10 minutes, until the dough is smooth and elastic.
  8. Form the dough into a ball and place in a greased bowl.
  9. Cover and let rise in a warm place until almost doubled in size, about 1 hour.
