Creamy and cheesy Velveeta enchiladas feature seasoned ground beef, melted cheeses, and a rich white sauce, perfect for comforting family dinners or casual gatherings.

Ingredients

  • 1 lb ground beef
  • 3 cups Cheddar cheese, grated
  • 1 lb Velveeta cheese
  • 2 onions, diced
  • 4 cups milk
  • 24 tortillas (corn or flour)
  • 6 tablespoons flour
  • 1 teaspoon salt
  • 1 stick margarine

Instructions

  1. Brown the ground beef in a skillet; add salt and pepper to taste.
  2. Grate the Cheddar cheese and chop the onions; set aside.
  3. Make a white sauce by cooking flour and margarine until bubbly.
  4. Gradually add milk and continue stirring until the sauce thickens.
  5. Add Velveeta cheese to the sauce and stir until melted and smooth.
  6. Assemble the enchiladas by filling tortillas with meat and cheese, then roll them up.
  7. Place rolled tortillas in a baking dish, pour the cheese sauce over the top.
  8. Bake in a preheated oven at 350°F (175°C) for about 20-25 minutes until bubbly and golden.
