Ingredients

  • 2 1/2 cups flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 cup butter
  • 2 teaspoons vanilla
  • 4 eggs
  • 14 ounces raspberry preserves
  • 1 1/2 cups sugar
  • 7 ounces coconut

Instructions

  1. Mix flour, salt, and baking powder in a bowl; cut in butter until crumbly.
  2. Add 2 eggs and 1 teaspoon vanilla; mix well.
  3. Press the mixture over the bottom of a buttered 10 x 16-inch baking pan and up 1 inch on the sides.
  4. Spread raspberry preserves evenly over the dough.
  5. In a separate bowl, beat 2 eggs, 1 teaspoon vanilla, sugar, coconut, and remaining ingredients; spread over the preserves.
  6. Bake at 350°F for 35 minutes until golden brown.
