Delightful thumbprint cookies filled with rich raspberry jam and coated with chopped pecans, perfect for sweet snacks, gatherings, or holiday treats with a buttery, nutty flavor.

Ingredients

  • 1 1/2 cups butter
  • 1 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla
  • 1/4 teaspoon salt
  • 2 2/3 cups flour
  • approximately 1 cup finely chopped pecans
  • approximately 1 cup thick raspberry jam

Instructions

  1. Cream the butter and brown sugar together.
  2. Separate the yolk from the egg white and discard the white.
  3. Add the egg yolk, vanilla, salt, and flour to the creamed mixture and mix well.
  4. Shape the dough into balls.
  5. Roll the balls in chopped pecans.
  6. Create an indentation in each ball and fill with raspberry jam.
