Raspberry Pinwheels are delightful buttery pastries filled with raspberry preserves and chopped walnuts, perfect for sharing at parties or enjoying as a sweet treat with tea.

Ingredients

  • 1 cup butter or margarine, softened
  • 1 (9 oz.) package cream cheese, softened
  • 1/2 cup sugar
  • 2 teaspoons vanilla extract
  • 1/8 teaspoon salt
  • 2 3/4 cups all-purpose flour
  • 1/2 cup red raspberry preserves
  • 1/2 cup finely chopped walnuts

Instructions

  1. In a large mixer bowl at medium speed, beat butter or margarine and cream cheese until light and fluffy.
  2. Beat in 1/2 cup sugar, vanilla extract, and salt.
  3. At low speed, gradually beat in flour until mixture forms a ball.
  4. Divide dough into two portions. Cover and chill for 30 minutes or until firm enough to handle.
