Ingredients

  • 3 oz. raspberry Jell-O
  • 1/4 c. sugar
  • 1 1/4 c. boiling water
  • 10 oz. frozen raspberries
  • 1 Tbsp. lemon juice
  • 3 oz. cream cheese
  • 1/3 c. sifted confectioners sugar
  • 1 tsp. vanilla
  • dash of salt
  • 1 c. heavy cream
  • 1 baked 9-inch deep dish pie shell

Instructions

  1. Dissolve the raspberry Jell-O and granulated sugar in boiling water.
  2. Add frozen raspberries and lemon juice to the dissolved mixture.
  3. Stir until the berries thaw and the mixture is combined.
  4. Chill the berry mixture in a bowl until it is partially set.
  5. Spread the partially set raspberry layer over the baked pie shell.
  6. In a separate bowl, beat the cream cheese until smooth.
  7. Gradually add sifted confectioners sugar, vanilla, and a dash of salt, mixing well.
  8. Fold in the whipped heavy cream until smooth.
  9. Spread the cream cheese mixture over the raspberry layer in the pie shell.
  10. Chill the assembled pie until fully set before serving.
