Ingredients

  • 15 razor clams
  • 1/2 lb. thick sliced bacon
  • 2 c. onion
  • 2 c. celery
  • 8 c. potatoes
  • 1 c. butter
  • 1 c. flour
  • 1 gal. milk
  • 1 glove garlic
  • 2 tsp. white pepper
  • salt

Instructions

  1. Drain the razor clams and save the liquor. Chop the clams into 1/2 to 3/4-inch pieces.
  2. Fry the diced bacon until almost done, then add the chopped onion and celery; cook until tender.
  3. Cook the diced potatoes separately and drain.
  4. Make a white sauce by melting the butter, then stirring in the flour, and gradually adding the milk, stirring constantly.
  5. Add the minced garlic or garlic powder, white pepper, and salt to the white sauce.
  6. Combine the cooked bacon, onion, celery, and chopped clams with the white sauce and potatoes.
  7. Simmer until flavors meld and chowder is heated through. Serve hot.
