A creamy, flavorful potato salad featuring tender potatoes, crunchy vegetables, and a tangy mayonnaise dressing, perfect for picnics, barbecues, or family gatherings.

Ingredients

  • 8 medium potatoes
  • 1 small onion, chopped
  • 2 tsp salt
  • 1/8 tsp pepper
  • dash of chervil (optional)
  • 2 Tbsp vinegar
  • 2 Tbsp hot water
  • 1/2 c mayonnaise
  • 1/2 c green pepper, chopped
  • 1/4 c pimento, chopped
  • 1/2 c celery, diced

Instructions

  1. Boil potatoes until tender.
  2. Peel and dice the potatoes while hot.
  3. Add chopped onion, salt, pepper, and chervil (if using).
  4. Combine vinegar, hot water, and 1/3 cup mayonnaise to make dressing.
  5. Add the dressing to the warm potatoes and allow to cool.
  6. Mix in chopped green pepper, chopped pimento, diced celery, and the remaining 1/2 cup mayonnaise.
  7. Chill before serving.
