Ingredients

  • 1 (1 lb.) loaf Italian bread
  • 1 garlic clove
  • 1/3 cup olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup thinly sliced scallions
  • 1 small tomato
  • 1 1/2 cups shredded Mozzarella cheese

Instructions

  1. Preheat oven to 500°F.
  2. Place bread, cut side up, on a baking sheet and set aside.
  3. In a small bowl, mix together the minced garlic, olive oil, salt, and pepper.
  4. Drizzle the garlic mixture over the sliced bread.
  5. Sprinkle the bread with sliced scallions and chopped tomato.
  6. Top with shredded mozzarella cheese.
  7. Bake in the upper half of the oven for 5 to 7 minutes or until the cheese melts and the edges of the bread brown.
  8. Cut into 1-inch pieces and serve.
