Ingredients

  • 1/3 cup finely chopped onion
  • 1/3 cup finely chopped carrot
  • 1/3 cup finely chopped celery
  • 1/3 cup olive oil
  • 2 teaspoons salt
  • pinch of pepper
  • 2 cups canned tomatoes with juice, roughly chopped

Instructions

  1. Saute the finely chopped onion, carrot, and celery in olive oil for about 5 minutes.
  2. Add salt, sugar, and canned tomatoes with juice to the vegetables and simmer for 45 minutes, stirring occasionally.
  3. Preheat the oven to 400°F.
  4. Spread 1/4 cup of the sauce over each of the two 12-inch pizza shells, leaving a 1/4-inch border around the edges.
  5. Sprinkle grated mozzarella cheese evenly over the sauce.
  6. Top with very thinly sliced red onions.
  7. Bake each pizza for 15 minutes or until the crust is golden brown.
