A vibrant, smoky red pepper salsa with roasted peppers, tomatoes, and jalapenos, perfect for adding bold flavor to grilled dishes or as a versatile dip.

Ingredients

  • 2 medium-sized sweet red peppers
  • 1 Anaheim chile
  • 1 1/2 cups peeled, seeded and chopped tomatoes
  • 2 jalapeno peppers, seeded and chopped
  • 1 clove garlic, minced
  • 2 teaspoons red wine vinegar
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt

Instructions

  1. Cut red peppers and Anaheim chile in half lengthwise.
  2. Remove and discard seeds and membrane.
  3. Place peppers, skin side up, on a baking sheet.
  4. Flatten with the palm of your hand.
  5. Broil 5 1/2 inches from heat for 15 minutes or until peppers are charred.
