Ingredients

  • 1 lb. ground meat, fried
  • 1 small onion, chopped fine
  • 1 clove garlic, crushed
  • 1 Tbsp. oil
  • 1 can yellow or white hominy
  • 1 can tamales
  • salt to taste
  • pepper to taste
  • 1/4 cup grated white or yellow cheese

Instructions

  1. Fry chopped onion, crushed garlic, and hominy until the onion is clear and the hominy starts to pop.
  2. Add fried ground meat and warm through.
  3. Add tamales, pressing out as much juice as possible from the papers. Mix and cut up the tamales; cook until all are warmed through.
  4. Optionally, bake in the oven for 20 minutes or cook in the frying pan.
  5. Top with grated cheese and serve with a green or fruit salad, French bread, and green vegetables.

Tips & Substitutions

For a bit of extra flavor, try adding cumin or chili powder to the ground meat while frying. If you prefer a vegetarian version, substitute the ground meat with a plant-based alternative or add black beans. You can also use leftover tamales if you have them, making this a great way to repurpose other Mexican recipes. Adjust the cheese type for a different flavor profile.

Serving Suggestions

Serve this hearty casserole with a side of fresh green salad or a refreshing fruit salad to balance the flavors. It pairs beautifully with Avocado Dip Or Guacamole for an extra creamy touch. For a complete meal, consider adding a side of Mother'S Spanish Rice or some warm tortillas.
