Ingredients

  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1 egg
  • 2 tablespoons shortening
  • 1 cup blueberries, drained
  • 3 tablespoons juice (orange or lemon)
  • 3/4 cup boiling water
  • 1 1/2 teaspoons soda
  • 1 1/2 teaspoons baking powder
  • 1 cup cranberries

Instructions

  1. Combine dry ingredients: flour, salt, soda, and baking powder.
  2. Mix in boiling water and juice (orange or lemon).
  3. Add egg and shortening, then fold in coarsely chopped cranberries and drained blueberries.
  4. Pour batter into a greased loaf pan.
  5. Bake at 325°F (160°C) for 1 hour.
