A creamy, chocolate-peanut refrigerated dessert with a crunchy crust, perfect for gatherings or a sweet treat, combining layers of pudding, cream cheese, and whipped topping.

Ingredients

  • 1/2 cup butter or margarine
  • 1 cup all-purpose flour
  • 1 cup finely chopped peanuts
  • 1 (8 oz.) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 (4 oz.) Cool Whip
  • 2 (4-serving size) instant chocolate pudding mix
  • 3 cups milk

Instructions

  1. In a mixing bowl, cut the butter into the flour until crumbly.
  2. Stir in 3/4 cup peanuts.
  3. Press the mixture over the bottom of a 13 x 9 x 2-inch baking dish.
  4. Bake in a 350°F oven for 20 minutes; cool.
  5. In a small mixer bowl, beat the cream cheese on low speed until fluffy.
  6. Beat in powdered sugar and half of the whipped topping.
  7. Spread over the cooled crust and chill.
  8. In a larger mixing bowl, combine the pudding mix and milk.
  9. Beat for 2 minutes until thickened.
  10. Spoon the pudding mixture on top of the cream cheese layer.
  11. Chill or freeze until firm, about 4 hours or overnight.
  12. Top with the remaining whipped topping (Cool Whip).
  13. Sprinkle with grated chocolate and the remaining peanuts.
