Refrigerator Kuchen is a soft, sweet yeast dough topped with your favorite fillings, perfect for a quick, no-fuss dessert or breakfast that keeps well refrigerated for days.

Ingredients

  • 3/4 cup milk
  • 1/2 cup sugar
  • 2 teaspoons salt
  • 1 stick margarine
  • 2 packages yeast
  • 1/2 cup warm water
  • 1 egg
  • 4 cups flour

Instructions

  1. Scald milk. Stir in sugar, salt, and margarine. Cool to lukewarm.
  2. Sprinkle yeast over warm water. Stir until dissolved.
  3. Stir in lukewarm milk mixture, egg, and 2 cups of flour with a mixer until smooth.
  4. Stir in 2 additional cups of flour with a spoon to make a stiff batter (but not as stiff as bread dough).
  5. Seal dough in an airtight container and refrigerate for at least 2 hours.
  6. Dough keeps for up to 3 days.
  7. Shape dough and place in 4 greased pie pans.
  8. Cover with topping and let rise until doubled in size.
