A comforting, nourishing soup with tender chicken, sweet carrots, leeks, garlic, and hearty brown rice, perfect for recovery or a cozy meal.

Ingredients

  • 10 cups water
  • 3-4 chicken breasts, cooked and cubed
  • 3 T. chicken soup base or chicken broth
  • 2-3 cloves garlic, ground
  • 3 leeks, sliced very thin
  • 5-6 carrots, sliced very thin
  • 1 cup brown rice
  • salt and pepper to taste

Instructions

  1. Add all ingredients except rice to a large Dutch oven.
  2. Bring to a simmer and cook until leeks are clear and carrots are nearly tender, about 20 minutes on low heat.
  3. Add the brown rice and cook until the rice is tender.
  4. Season with salt and pepper to taste.
  5. Serve hot.
