Ingredients

  • 2 1/2 cups flour
  • 1 1/2 cups white sugar
  • 2 teaspoons ginger
  • 1 teaspoon nutmeg
  • 3 teaspoons cinnamon
  • 2 teaspoons soda
  • 1 1/2 teaspoon salt
  • 4 eggs
  • 1 1/2 cups brown sugar
  • 2 small cans pumpkin
  • 1 box dry mincemeat
  • 2/3 cup water
  • 1 cup salad oil
  • 1 cup chopped nuts

Instructions

  1. Mix white sugar, spices, soda, and salt.
  2. Add eggs, water, and oil; mix well.
  3. Combine brown sugar and pumpkin; add to the mixture.
  4. Blend at low speed until combined, then beat on medium speed for 3 minutes.
  5. Add the dry mincemeat and chopped nuts; mix thoroughly.
  6. Spray the inside of wide-mouth pint jars with cooking spray and fill half full with batter.
  7. Do not put on lids.
  8. Bake in a 325°F (160°C) oven for 45 minutes.
  9. Remove from oven and seal immediately.
