A hearty microwave Reuben casserole combining corned beef, sauerkraut, Swiss cheese, and tangy mustard, perfect for quick comfort food that fans of classic sandwiches will enjoy.

Ingredients

  • 1 Tbsp. Dijon mustard
  • 4 slices rye bread
  • 1 can corned beef
  • 1 lb. sauerkraut, drained
  • 1 can condensed tomato soup
  • 1/4 c. water
  • 3 Tbsp. dill pickle relish
  • 4 slices Swiss cheese

Instructions

  1. Lightly grease an 8 x 8-inch square baking dish.
  2. Spread mustard evenly on bread slices.
  3. Cut bread into small squares.
  4. Place bread squares in the bottom of the prepared baking dish.
  5. Crumble corned beef over the bread layer.
  6. In a mixing bowl, combine sauerkraut, condensed tomato soup, water, and dill pickle relish until well blended.
  7. Spoon the sauerkraut mixture over the corned beef layer.
  8. Cover the dish loosely with waxed paper and microwave on high for 6 to 8 minutes.
  9. Remove the waxed paper and place Swiss cheese slices on top to cover.
  10. Microwave on high for an additional minute or until the cheese is melted.
  11. Let stand uncovered for 5 minutes before serving.
