A hearty and tangy salad combining corned beef, sauerkraut, Swiss cheese, and fresh herbs, perfect for a flavorful lunch or casual dinner with crunchy rye croutons.

Ingredients

  • 16 oz. can sauerkraut, drained
  • 1/4 cup dill pickle, chopped
  • 1/4 cup parsley or cilantro, chopped
  • 6 cups lettuce, chopped
  • 1.5 lb. roast beef, chopped
  • 1.5 cups Swiss cheese, grated
  • Rye bread croutons or toasted rye bread slices

Instructions

  1. Mix the drained sauerkraut, chopped dill pickle, and chopped parsley or cilantro together.
  2. Layer half of the chopped Romaine lettuce on a serving platter.
  3. Spread half of the sauerkraut mixture over the lettuce.
  4. Add half of the chopped roast beef on top.
  5. Sprinkle half of the grated Swiss cheese over the beef.
  6. Repeat the layering with the remaining lettuce, sauerkraut mixture, roast beef, and Swiss cheese.
  7. Spread with your preferred dressing.
  8. Serve the salad sprinkled with rye croutons or accompanied by toasted slices of rye bread.
