Ingredients

  • 1/2 stick butter or margarine
  • 1 small onion, chopped
  • 1 stalk celery, chopped
  • 1 cup raw rice
  • 2 cups water or chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2/3 cup ripe olives, chopped

Instructions

  2. Stir well to combine.
  3. Cover and cook on high for 1 hour.
  4. Then cook on low for 4 to 6 hours.
  5. Alternatively, bake in the oven for 1 hour at 375°F or until the rice is cooked.
