Ingredients

  • 1 1/3 cups long grain rice
  • 3/4 cup mayonnaise
  • 1/2 teaspoon salt
  • dash of pepper
  • 1 cup sliced raw cauliflower
  • 1/2 cup chopped celery
  • 1/4 cup French dressing
  • 1 tablespoon chopped green onion
  • 1/2 teaspoon dry mustard
  • 1/2 pound fully cooked ham
  • 5 ounces frozen peas
  • 1/2 cup sliced radishes

Instructions

  1. Cook the rice, then toss it with French dressing and chill for several hours.
  2. In a bowl, combine mayonnaise, chopped green onion, salt, dry mustard, and pepper.
  3. Add the mayonnaise mixture to the chilled rice and toss well.
  4. Stir in chopped ham, cauliflower, cooked peas, chopped celery, and sliced radishes.
  5. Toss again to combine all ingredients evenly.
  6. Optionally, serve in a scooped melon shell for presentation.
