Ingredients

  • 1 lb grated Cheddar cheese
  • 1 clove minced garlic
  • 2 medium onions, finely chopped
  • 2/3 stick melted margarine
  • 2 cups cooked rice
  • 1 package thawed, chopped spinach
  • 2 beaten eggs
  • 1 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine all ingredients in a large mixing bowl: grated Cheddar cheese, minced garlic, chopped onions, melted margarine, cooked rice, chopped spinach, beaten eggs, and milk.
  3. Mix well until all ingredients are evenly incorporated.
  4. Transfer the mixture to a greased baking dish.
  5. Bake in the preheated oven for 1 hour or until the casserole is set and golden on top.
